Lemony Turkey Rice Soup

INGREDIENTS
6 cups chicken broth, divided
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
2 cups cooked rice
2 cups diced cooked turkey
1/4 teaspoon pepper
2 tablespoons cornstarch
1/4 cup lemon juice
1/4 cup minced fresh cilantro or parsley

DIRECTIONS
In a large saucepan, combine 5-1/2 cups of broth, soup, rice, turkey and pepper. Bring to a boil; boil for 3 minutes. In a small bowl, combine cornstarch and remaining broth until smooth. Gradually stir into hot soup. Cook and stir for 1-2 minutes or until thickened and heated through. Remove from the heat; stir in lemon juice and cilantro.

This is a wonderful variation on the standard turkey-noodle-vegetable soup we usually make after Thanksgiving. I cut back the lemon juice to 1/8 cup and it was just enough to add some tang but not overwhelming. Could "bulk it up" with more cooked rice and turkey for a heartier meal. Saved this for future turkey leftovers!

This soup was really delicious. It is a really nice change from the ordinary. I added garlic cloves and some spinach. I love the cilantro and lemon. Awesome soup!

This was just ok. It really had a bit too much lemon, which usually wouldn't bother me but it was biting and overwhelming. I added some paprika, garlic and onion to try to balance it out a bit.

this was really good!!! you can add some extra rice and turkey to bulk it up if you like a heartier soup(which i do!). i used parsley i had left from another recipe i made earlier in the week and it was delish, though i am sure the cilantro would be tasty too! reminded me of restaurant soup!!!! i will definately make this again! thanks for the great recipe!

This soup was very good. Be sure to add the fresh cilantro and use fresh lemon juice. The combination wakes up what would be otherwise a bland soup. Next time I will use either brown rice or a combination of wild and whole grain rice. No cooked turkey? I suggest using 2 cups of shredded rotisserie chicken from the deli.

I made this recipe after Thanksgiving with leftover turkey. I really liked it. I did reduce the amount of lemon juice because some family members do not like lemon. I will save this recipe for next year when I am overwhelmed with turkey!

This soup was just great! I made the soup without lemon for my non-lemon loving family and they liked it a lot. I added 1 1/2 t of chicken bouillon to add some flavor. I sauted about 1/2 an onion in the pot before adding in all the other ingredients. I added the lemon to my individual serving and it was absolutely delicious! I also doubled the pepper in the soup. Thanks for sharing :-)

Very good! I did not put the full ammount of lemon juice in, but used several tablespoons instead. I also used a little more pepper. My family enjoyed! Great way to use up leftover turkey.
