INGREDIENTS
1/2 cup olive or vegetable oil
3 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon Dijon mustard
1/2 teaspoon salt (optional)
1/8 teaspoon pepper
9 cups torn romaine lettuce
1/4 cup grated Parmesan cheese
1 cup salad croutons (optional)
Sliced red onion (optional)

DIRECTIONS
In a small bowl, combine oil, lemon juice, garlic, mustard, salt if desired and pepper; mix well.
In a salad bowl, combine romaine and cheese. Drizzle with dressing; add croutons and onion if desired. Toss to coat. Serve immediately.

Nutritional Analysis: 1 cup of salad with 1 tablespoon of dressing (prepared without salt and croutons) equals 146 calories, 79 mg sodium, 2 mg cholesterol, 2 gm carbohydrate, 2 gm protein, 15 gm fat, 1 gm fiber. Diabetic Exchanges: 3 fat, 1 vegetable.

Loved it! The dressing has a wonderful garlic flavor. I used store bought garlic croutons & it turned out great! Instead of achovies I used anchovy paste. I also added more milk since it was a bit thick. It makes a lot of dressing. Thank you for a great recipe!

We cant eat anything with gluten or dairy, so I replaced the croutons for chopped walnuts and I didnt use any parmesan.I didnt have any lemons, so I used limes and I thought the the recipe was still great! Lots of garlic and a good bite with the Dijon! YUMMY!!

I made a half recipe, minus the red onions. It was rather bland and too olive-y, so I added a little more lemon juice and parmesan and doubled the garlic, which helped. The olive taste may have been less overpowering if I hadn't used extra virgin oil, and reggiano parmesan might have given it more flavor. Thought it was okay; my BF really liked it.

This was good although when I made it exactly as stated all I could taste was garlic. I added more lemon and oil but the garlic was still overpowering so I ended up adding some fresh squeezed orange juice to sweeten it up a bit. That seemed to help. I guess it depends on how large your clove of garlic is and mine were fairly large so next time I will use less. I made it at camp as a dish to share and everyone said they liked it so I will be making it again.
