1 head bibb or Boston lettuce, separated into leaves
1 large tomato, sliced
1 small cucumber, sliced
1/4 cup olive oil
2 tablespoons lemon juice
2 teaspoons snipped fresh dill
1/4 teaspoon salt
1/8 teaspoon pepper

DIRECTIONS
Arrange the lettuce on four salad plates. Top with tomato and cucumber slices. In a jar with a tight-fitting lid, combine the oil, lemon juice, dill, salt and pepper; shake well. Drizzle over salads.

I just made the dressing, replacing dill with thyme and adding roasted garlic. Going to serve with oven-roasted potatoes and pan-grilled scallops.
