INGREDIENTS
1/4 cup butter or margarine, melted
1/4 cup lemon juice
2 garlic cloves, minced
2 teaspoons dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon paprika
2 (1 1/4 pound) Cornish game hens

DIRECTIONS
In an bowl, combine the first seven ingredients. Place hens on a rack in a shallow baking pan. Tuck wings under hen. Spoon half of butter sauce over hens. Bake, uncovered, at 425 degrees F for 40-45 minutes or until juices run clear and a meat thermometer reads 180 degrees F, basting occasionally with remaining sauce.

I tried this recipe after I had my baby and I must say that it was extremely easy to prepare. Which was why I chose this recipe and to my suprise, the hens were extremely tasty!

Definitely not our cup of tea. Albeit my first time making and eating a Cornish hen, these were really bland despite basting repeatedly with the butter sauce. I am giving this 3 stars because my boyfriend ate his, but I think he was just trying to make me feel better. I am guessing that it's not the fault of the recipe, but that we just don't like Cornish hens. Win some, lose some, right?!

I thought these had really great flavor. I loved the lemon herb butter. They were easy to make too. I forgot to check the hens' cavity for spare body parts...oops. Oh well- these still turned out great! We only wish the skin had crisped up more, but it may have been something I did.

These are excellent! Cooked our hens for an hour, covered the last 15 minutes due to browning and they were moist. My family loved the lemon touch! Thanks!
