I made this exactly as written. The batter was very thick. The texture of the finished cake was really spongy, I love lemon, but this had a strange artifical taste. I used Duncan Hines cake mix and Musselmans pie filling. The frosting as written is not nearly enough if baked in the pan size given in the recipe. Sorry : (

We enjoyed this cake a lot. My only criticism would be that (I thought) the frosting was a little sweet and heavy. I would have liked a fluffier frosting on it, with maybe some lemon rind or something in it. But it is a great cake regardless, and perfect for a potluck or family gathering.

This cake is so GOOD! I got a TON of compliments when I made it. I did add some fresh squeezed lemon juice, and the zest of one lemon. I also used a different lemon cream cheese frosting.

I tried this for the first time last night that someone else had made, but thought it was very good. Good lemon flavor and was surprised of the ingredients that were in it. I plan to make this myself.

This cake was a big hit with my guests. They couldn't believe it was from a cake mix! So easy and quick to make! Next time for a little extra lemony taste I'm going to cut back on the vanilla and add lemon zest and lemon juice to the icing. Also, I'm going to try a Chocolate version with chocolate cakemix and pie filling.
