I actually haven't made them but I would definately suggest Polly-O Ricotta and draining it in a cheesecloth or strainer the night before. I did this when i made an italian cassata cake and that will give you a firmer ricotta to work with

I purchased store brand ricotta cheese and that may be the problem, but I was really hoping for a cheesecake flavor and consistency and it was not. So if you make this, use good quality ricotta.

These were pretty good. Mine came out a little messy, and although I refrigerated these, it doesn't take long at room temperature for them to lose their "set" and get a bit goopy. BUT, they were a hit and disappeared pretty quickly so I guess it doesn't matter too much ;-)

My family really enjoyed this for our Easter brunch! I had made a sauce out of fresh strawberries and orange zest to serve on the side...what a lovely combination! I did have trouble finding the lemon cake mix with pudding and ended up using a box of Duncan Hines lemon cake mix and one small box of lemon instant pudding mix that I folded into the prepared cake mix. The reult was a very moist but light dessert!

This did not go over well at all. Way to heavy and mushy. Out of 20 people I only heard one person say they like it. It was an expensive recipe too.

these were ok. I like a stronger lemon flavor they were very mild. The texture was just ok also.

Not usually a ricotta fan, I was worried that this dessert would scream ricotta (I happened to have the ricotta on hand for a meal I opted not to make and needed a clever way to use it up). To my surprise and delight, the lemony flavor masked the ricotta and this dessert was not only easy, it looked great and tasted fantastic!
