3/4 cup butter, softened
1/2 cup confectioners' sugar
1 tablespoon poppy seeds
1 tablespoon lemon juice
1 1/2 cups all-purpose flour
2 teaspoons sugar

DIRECTIONS
In a mixing bowl, cream butter and confectioners' sugar. Stir in poppy seeds and lemon juice. Gradually add flour; mix well. Divide dough into four portions. On a lightly floured surface, roll out each portion into a 4-in. circle. Transfer to ungreased baking sheets. Cut each circle into six wedges. Prick dough with a fork. Sprinkle with sugar.
Bake at 325 degrees F for 20-25 minutes or until golden. Cool for 4 minutes before removing to wire racks. Break into wedges when cool.

Perfect texture and taste! Light but not too crumbly. My additions were lemon zest and a bit of vanilla extract, and I left out the poppy seeds. The dough was very wet and needed a lot of flour for rolling, but maybe this is because I used too much lemon juice (I just squeezed out a whole lemon). Otherwise followed recipe exactly and it was delicious!

Great recipe! So easy to make and so good! I left out the lemon and poppy seed because I was in the mood for just plain ol' yummy short bread cookies. I will definitely throw in the lemon next time.

Love this shortbread!!!!! Will use again every year. Very kid friendly since there are not any eggs. I did use 1/2 tablespoon of lemon juice and 1/2 tablespoon of lemon extract. Lechgrti
