'We have peach trees and blueberry bushes, so combining those fresh fruits with a thick old-fashioned custard sauce is an extraordinary summer treat,' relates field editor Suzanne Cleveland of Lyons, Georgia.

Tart and refreshing with a smooth, creamy, meringue-like consistency. Blueberries can be omitted if necessary, but it won't be nearly as good!

This is a deliciously light, creamy, sophisticated little dessert from days gone by. I first tasted it at a supper given by a lecturer in seventeenth-century literature when I was at college, and it took our tastebuds right back to the Restoration. It can be prepared as either a parfait or a punch - please note that either version contains alcohol, so you may not want to serve this to younger family members.

A mixture of flour, cinnamon, nutmeg and sugar is sprinkled in the bottom of a prepared pie shell. Sliced peaches are piled in, and more sugar is sprinkled on top. Heavy cream is then poured over the peaches, and this heavenly pie is baked until the peaches are tender.

First you make a very creamy and rich egg custard. Then you stir in butter, fresh lemon juice, bits of lemon rind and sour cream. Pour this refreshing filling into a baked pie shell, chill the pie, and garnish it with sprigs of mint and thin slices of lemons.

Lemon Cloud Pie I

First you make a simple lemon custard, then you stir in cream cheese, and then comes the sweetened whipped egg whites. That 's the cloud-like part. This lovely pale yellow filling is then spooned into a baked crust and chilled. Serve with fresh, sliced strawberries or blueberries.

A lemon supreme dessert bar mix is the base for this pie 's yummy almond crust and lemon-cream cheese filling. The pie is chilled, sprinkled with almonds and served to raves.
