Heres a tart and tangy, tiny-enough-for-two pie thats proof good things still come in small packages! Sent in by Sherie Crane of Wichita, Kansas. TIP: You can use a refrigerated prepared pie crust, but you wont use it all for this recipe.

This pie has a luscious, made-from-scratch lemon pudding, so you 'll need a double boiler. Fresh lemon juice and grated lemon rind are stirred into the thick pudding just before it 's poured into a pie shell. Then a meringue is whipped up and spread over the top, and the pie is slipped into the oven until golden brown. 

Orange Meringue Pie

Orange juice concentrate and grated orange rind are mixed into a cooked, sweetened cornstarch mixture. Egg yolks and a bit of butter are stirred in, and this lovely citrus filling is then poured into a prepared crust and topped with meringue. A few minutes in the oven and this glorious pie is ready to serve.
