Lemon Garlic Mushrooms

"To prepare this simple side dish, baste whole mushrooms with a lemony sauce. Using skewers or a grill basket makes it easy to turn the mushrooms."

INGREDIENTS

  • 1/4 cup lemon juice
  • 3 tablespoons minced fresh parsley
  • 2 tablespoons olive or vegetable oil
  • 3 garlic cloves, minced
  • Pepper to taste
  • 1 pound large fresh mushrooms

DIRECTIONS

  1. In a small bowl, combine the first five ingredients; set aside.
  2. Grill mushrooms, covered, over medium-hot heat for 5 minutes. Brush generously with lemon mixture. Turn mushrooms; grill 5-8 minutes longer or until tender. Brush with remaining lemon mixture before serving.

Nutritional Analysis: One serving equals 96 calories, 7 mg sodium, 0 cholesterol, 8 gm carbohydrate, 3 gm protein, 7 gm fat, 2 gm fiber. Diabetic Exchanges: 1-1/2 fat, 1 vegetable.

I liked the idea, but found the lemon taste too overpowering. I well definatly try this again withought the lemon though.

When I came to do this recipe I realised I would be using my grill for something else, so I marinated the mushrooms in the other ingredients for an hour and then sauted them. Lovely!

These were great! I made them as a side dish for both Christmas Eve and Christmas Day. The second time I made them I used garlic powder instead of garlic cloves. I also mixed white mushrooms with portobellas for a little variety. Thanks so much!
