Lemon-Garlic Green Beans

INGREDIENTS

  • 2 garlic cloves, minced
  • 2 teaspoons olive oil
  • 1 pound green beans, trimmed and cut into 2 inch pieces
  • 1 tablespoon lemon juice
  • 1/4 teaspoon coarsely ground pepper
  • 1/8 teaspoon salt

DIRECTIONS

  1. In a large nonstick skillet coated with nonstick cooking spray, cook the garlic in oil over medium heat for 30 seconds. Add the beans; cook and stir for 10-13 minutes or until crisp-tender. Stir in the lemon juice, pepper and salt.

FOOTNOTE

  • Nutritional Analysis: 3/4 cup equals 54 calories, 2 g fat (trace saturated fat), 0 cholesterol, 80 mg sodium, 8 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.
