2 garlic cloves, minced
2 teaspoons olive oil
1 pound green beans, trimmed and cut into 2 inch pieces
1 tablespoon lemon juice
1/4 teaspoon coarsely ground pepper
1/8 teaspoon salt

DIRECTIONS
In a large nonstick skillet coated with nonstick cooking spray, cook the garlic in oil over medium heat for 30 seconds. Add the beans; cook and stir for 10-13 minutes or until crisp-tender. Stir in the lemon juice, pepper and salt.

Nutritional Analysis: 3/4 cup equals 54 calories, 2 g fat (trace saturated fat), 0 cholesterol, 80 mg sodium, 8 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

This is really good. I added some chili powder b/c I like things spicy, but it would have been good just as is.

These are nicely crisp and fresh tasting. Next time I might blanch or briefly steam the green beans prior to tossing in the pan with garlic. I don't have an oversized frying pan, so they came out a bit unevenly cooked when I followed the cooking instructions on the recipe.

These were delicious! I have never cooked green beans before and I thought they would taste kind of plain, but the balance of flavors is perfect. They are very light and the green beans are not overly-flavored, they are just right.

The nice thing about this recipe is you can add or subtract any of the flavors to make it more or less lemony and/or garlicky. Simple, fresh flavors and a great way to use fresh green beans.

Even my vegie-phobic husband ate these. I needed something to do with my beans other than throw them out because he won't eat them. Sublime. I used one third of the amount of beans and the recipes amounts of garlic and lemon for extra tang. Yum.

This is a great and quick side dish. I made this with fresh green beans from my garden and it did them justice. I will definitely make this again.

Great bean side dish. Followed recipe except I used a can of French cut beans. This is definitely a keeper. Had with Salisbury steak (from this site) and mashed potatoes. MMMM great meal !!
