The cupcakes themselves are beautiful. Soft, fluffy, moist, and delicious. The only thing I changed was to add an extra Tbsp of zest and 2 extra Tbsp of lemon juice. The Frosting was more like whipped cream than frosting, and that was after I added an additional 3/4 of powdered sugar to try and get a firmer consistancy. It's wonderful and light but wouldn't hold up well in warmer weather unless served immediately. If making these a day in advance or for an outdoor summer party I would suggest a lemon glaze or thicker frosting. The end result was wonderful though and I will make the cupcakes again, just different frosting.

Made these last week. Everyone LOVED them and they were gone super fast! Doubled the lemon juice and zest and used APF w 1 1/4 tsp baking powder for each cup of flour. Came out pretty dense but I also didn't sift the flour. They were still delicious!

Great cake part. The only thing different that I did was add extra lemon. Turned out great. However, I did not like the icing at all. I didn't think it was sweet enough and I could taste too much heavy cream. I will make these cupcakes again just use a different icing.

Best Cupcakes I have ever made! I used 3 Tsp of Zest in the batter and topped the cupcakes with zest like in the picture. In the icing I used 4 Tsp of lemon juice. I think it was perfect.

So easy and so good. This rating is only for the cupcakes, not the frosting. I left the kitchen for the cupcakes to cool and when i returned to make the frosting, more then 1/2 the cupcakes were gone. The only thing I will do differently next time is double the recpie (appaently 30 cupcakes just was not not enough) i think that i will use a little lemon extract in addition to the juice and zest. Also my 3 year old who never eats the cake part of a cupcake or cake snuck three and ate them all with no frosting. I think I just found her birthday cake! :) Thank you for sharing.
