2/3 cup butter or margarine, softened
1 1/2 cups sugar
3 tablespoons lemon juice
2 tablespoons grated lemon peel
4 eggs
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons salt
1 cup milk
2 cups dried cranberries
1 cup chopped walnuts
Glaze:
1/4 cup sugar
1/4 cup lemon juice

DIRECTIONS
In a mixing bowl, cream the butter, sugar, lemon juice and peel. Add the eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk. Stir in cranberries and walnuts. Pour into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. With a toothpick or skewer, poke 12 holes in each loaf. For glaze, combine sugar and lemon juice until sugar is dissolved. Spoon over loaves. Cool completely before slicing.

Amazing bread! It has a great sweet tart taste, and is so pretty that I'm giving it out for xmas this year. If you're making mini loaves, the whole recipe makes 6 perfect mini loaves of bread. I just sprayed the pans with Pam, then gave them a nice coating of white sugar before I poured the dough in. Afterwards I made a tart powdered sugar/lemon juice glaze and poured on while still hot so it really soaked in. Everyone that I've given some to has wanted the recipe. I just can't rave about this bread enough!!

This is really good bread! The first day I made it, it was pretty good, but not great. I let it sit overnight in a big sealable bag and the flavor really improved- I think the lemon glaze got a chance to soak in and add flavor and moistness. I used fresh cranberries because I mis-read the recipe but I really liked them in there. I used half applesauce for the oil. I made it in two regular-sized loaves. This bread is anything but dry.

Very pretty and unique. I like the idea of the cranberrieds in the lemon loaf, but it just left something to be desired for me. The sugar didn't dissolve well in the lemon juice so I heated the juice and sugar in the microwave for 35 seconds and this worked perfectly. I also added the glaze while still in the pan after the first one. Adding it after it is taken out was just a little too messy and I lost some of the glaze that way. But poking the holes and pouring it on the warm loaf still in the pan worked great. It still came out of the pan okay.

It was probably me, but these came out heavy and dense. They taste pretty good, although I'll chop up the cranberries next time for more distribution, and maybe a bit more lemon flavoring. They look so pretty, I will try them again, but make sure they don't over-cook.

Made mini mini loafs sooo good!!! Ate one already. I had to substitute Shaved Almonds, and Crushed Hazelnuts. Im going to try using some fresh made cranberry sause. Thank you so much this is to die for!

I baked this in a regular loaf pan and decreased the temperature to 325 and increased the cooking time considerably (just under two hours) but it turned out beautiful, just like in a picture. The only thing I would change is the amount of lemon in the bread itself, the glaze was perfect but the bread kind of leaves a tase in your throat due to the massive amounts of lemon. I'll probably cut the zest next time, otherwise, gorgeous. Will definitely make again.

This is a great recipe IF you follow the directions. I tried to treat the dried cranberries as you would raisins and plumped them which put to much liquid in the mix. DON'T!!!! Once I made this the right way it was wonderful and got many smiles. I did try orange peel and juice and the flavor was really good.

Perfect, delicious recipe. Maybe a small bit dense, but that could be my fault for over beating... or under beating... I'm not sure. Loaf has always been tricky for me. But the glaze ensures that it's not dry at all, and it's been getting great receptions!
