Directions

  1. Preheat oven to 350 degrees F. Mix wafer crumbs, 1/4 cup of the sugar, the butter and lemon peel until well blended. Press firmly into 8-inch square baking pan. Bake 8 min.
  2. Beat eggs and remaining 3/4 cup sugar in small bowl with wire whisk until thickened and well blended. Add lemon juice, flour, baking powder and salt; mix well. Pour over crust; sprinkle with coconut.
  3. Bake 25 to 30 min. or until center is set and top is lightly browned. Cool completely. Cover and refrigerate several hours or until chilled before cutting to serve. Store in tightly covered container in refrigerator.

While these do taste very good, I won't be using this recipe again. The vanilla wafer "crust" doesn't form a crust, but an additional layer that basically turns soft and sticky. There is no real substance, then, to make these firm and able to keep their shape when handled. Also, I had lined my pan with foil in order to make cutting these easier - the foil stuck to the bars, making it all but impossible to remove. I can only imagine that had I not lined the pan, they would merely have stuck to the pan and would have been even a bigger pain.

I read the first review on this recipe and decided to try it anyways. They were right. It was pretty sticky on the bottom and little tough to take out of the pan so I did it again and changed some of the ingredients. I used 1 3/4 cups of graham cracker crumbs instead of the vanilla wafers. Bake it for 10 minutes, not 8. I also found it really helpful when making the filling to mix the ingredients in one at a time after the egg and sugar mixture. By making those little changes, the squares were exquisite!! I hope that helps.
