Everyone loved this cake! I wasn't sure how coconut-y it would be considering the only coconut there is is on the icing, but it balanced out the cake perfectly. I followed the recipes from scratch to a T except for the water measurements in making the fillilng-I only ended up using about a half cup of water instead of a whole cup to make the icing thicker

Everyone really loved this cake when I made it, even the toughest of critics. It's so simple and the textures of the filling, cake, and frosting were perfect. I thought, however, it lacked coconut flavor so I added 1 teasp coconut extract to the batter. I also used my own cream cheese frosting because I felt this one was too "cheesey" tasting.

modifications made: instead of following the recipe for the cake, i just used a white cake box mix. i added lemon pudding to the cake. i also split the layers in two and added blackberry sauce in between. to find the recipe for the blackberry sauce, look up 'lemon cheesecake' which was submitted by 'rebekah'. the sixth review down (Linnsie) has a blackberry sauce recipe. it really adds something to the cake. give it a try. otherwise, i followed the recipe exactly for the filling and the frosting. i had enough of both, no need to double it. the filling is very good. i would recommend this to a friend.

I gave this recipe 4 stars, because overall it was a very good tasting cake. The only negative comments were that it was very "bready." I had some troubles the first time I made it, I hadn't let the eggs sit for full 30 minutes, and therefore they didn't get to a solid peak when whipped. I thought this was why there was barely enough batter for 3 pans, and when cooked they weren't very thick layers. So, I did it again. This time the cakes came out harder but still, very thin. I would say they were 1/4 inch high each. Anyways, the cake was very good. I actually added lemon juice to the frosting, which I think made the cake taste much better. Also, I think next time I will double the amount of filling. You could hardly taste it there.

DO NOT MAKE THIS CAKE!! You will eat it continuously until it is gone! It will make you fat!!! Great recipe! I'll definitely make this again!!

I made this exactly according to the recipe and it couldn't have turned out better. Everyone who had it came back for seconds. I will definitely make this again!
