Lemon Chicken Scallopini with Spinach

Directions

  1. Grate 1 teaspoon zest and squeeze 1/4 cup juice from the lemon.
  2. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides and cooked through. Remove the chicken from the skillet, cover and keep warm.
  3. Stir the garlic, stock, lemon juice, lemon zest and soup in the skillet. Add the spinach and cook and stir until the spinach is wilted. Return the chicken to the skillet.

Made this for dinner tonight. It was so tasty and fast to make. Reviewing with no changes to the recipe except salt and pepper on the chicken before cooking it. I have leftovers for lunch tomorrow. I served it over egg noodles and asparagus.

100% delicious! I happened to have some lemon-basil olive oil so I used that, otherwise made as per directions. Served over egg noodles as suggested by prior reviewer. Fresh, flavorful and yummy!!
