This was delicious and got lots of compliments. I followed the recipe closely, merely using about 1/4 cup of fresh lemon juice in place of some of the water. I needed a large cake, so I doubled the recipe and made 2 sheet cakes and layered them with a thin layer of raspberry jam in between. This served close to 30 people. The topping didn't thrill me, but I made it as written. Next time I will use fresh lemon juice rather than extract. The topping tasted off and artificial to me but after sitting overnight, the flavor mellowed considerably and it turned out fine.
