Great moist lemon cake, I did change this recipe slightly due to some of the other reviews. I added 2 teaspoons lemon extract, a few drops of yellow food colouring and 1 tablespoons of poppy seeds. I also reduced the sugar to 3/4 cup. So pleased with both the texture and taste of this lemon loaf. It cooked to perfection in my new Nordic Ware Lemon Loaf pan.
