These muffins were okay... my husband, who doesn't prefer very sweet things, liked them a lot, but I would have doubled the sugar and the salt. I used the zest and the juice of a whole lemon, and I'm glad I did because the lemon flavor was good. I also used two whole eggs instead of one whole and one white. (To compensate for added moisture, I threw in a couple of extra tablespoons of flour.) The texture was very nice, but next time, I think I'll add that extra sugar and salt.
