Lemon Blueberry Pie

Fresh blueberries are gently folded into a lemony batter and poured into a baked pie shell. A lovely meringue is then spooned over the top, and the pie is slipped into a hot oven until golden. This recipe yields two pies.

This is a baked lemon pie made light and airy with lots of fluffy egg whites folded into the lemony and buttery milk batter. The pie is baked for an hour until the filling is set and the top is golden. Serve with a home made blueberry syrup.

This pie has a luscious, made-from-scratch lemon pudding, so you 'll need a double boiler. Fresh lemon juice and grated lemon rind are stirred into the thick pudding just before it 's poured into a pie shell. Then a meringue is whipped up and spread over the top, and the pie is slipped into the oven until golden brown.

The filling for this beautiful pie is a cooked lemon custard with heaps of whipped cream folded in. This yummy filling is piled into a baked meringue pie shell studded with bits of lemon zest. Garnish with sliced strawberries.

Milk, sugar, lemon juice, butter, egg yolks and a smidgen of lemon rind are stirred together and then combined with beaten egg whites. This light and fluffy filling is then spooned into a pastry shell and baked until golden.

First you make a very creamy and rich egg custard. Then you stir in butter, fresh lemon juice, bits of lemon rind and sour cream. Pour this refreshing filling into a baked pie shell, chill the pie, and garnish it with sprigs of mint and thin slices of lemons.

There is nothing to beat a fresh blueberry pie. It doesn 't need much: sugar, a bit of cornstarch to thicken all the nice juices and cinnamon. It 's perfect with fresh berries, but still mighty fine with frozen ones.

Who would have thought? Blueberries and cherries in the same pie. But they 're divine together. You 'll have to pit the cherries, but it should be a labor of love. The berries are sugared, dusted with flour and cinnamon, and dotted with butter. The oven takes care of the rest.

Egg yolks are beaten, milk and lemon juice stirred in, and the filling is poured into a graham cracker crust. The pie is frosted with meringue and slipped into the oven until golden.
