Both my husband and I loved this salad recipe. As many others did, I replaced the water with vinegar and the combination of flavor and freshness was delightful - highly recommend it!

The salad was good, though I didn't really care for the water in the dressing. I remade it with tarragon vinegar instead of water and added a clove or two of garlic. Mmmm! My lunch guest loved it!

3/15/09: This salad is very refreshing. I love artichokes and the lemon is a natural accompaniment. The only thing I would change is to use less salt, maybe only 1/2 tsp., in the dressing. With the salt from the olives and artichokes, not that much is really needed. I think I will make this again. Romaine is high in vitamins A and C! 3/16/09 Update: We had the leftovers tonight and I added more lemon juice and some white wine vinegar and it was much better. The next time I make this salad I will use the following proportions: 1 1/2 Tbsp. water, 1 1/2 Tbsp. white wine vinegar, 4 Tbsp. lemon juice, 2 Tbsp. olive oil, 2 garlic cloves, 1/2 tsp. salt, and 1/2 tsp. pepper.

The ease of this recipe is what earns its 5 stars. It is delicious, and I had everything on hand to throw it together at the last minute. I used a bagged salad, and liked the lightness of the dressing - plenty of flavor but it wasn't oily. My kids even gobbled it up!

Got huge raves at the potluck I brought it to. I used half vinegar/half water. I'm planning on experimenting with using the dressing on all sorts of different salads.

This needs work as-is. I followed the recipe but scaled it down and the only change I did make at the time was to increase the lemon juice by about another Tablespoon because as-is was (as a previous reviewer stated) too much olive oil taste. If I make it again I'll replace some or all the water with white balsamic vinegar and I like another reviewer's idea of adding a little mayo although that may defeat the healthiness of it. If you didn't add vinegar then I think marinated artichokes would help because it just lacks a little something as-is.

Very good salad. Great for a hot summer night. I used marinated artichoke hearts because that was all I have but otherwise followed the recipe to a tee.

My parents and I thought it would have tasted just as good with cucumbers instead of artichokes, and we have a LOT of cucumbers from our garden. I also used a little bit more lemon juice than it called for since when I tasted the dressing initially it tasted like olive oil predominantly. Overall, a good recipe and one will will try again!

FABULOUS! I used all the juice from a lemon, and probably a little less olive oil. I used white vinegar for 1/2 the water. I loved how light the salad was. Will definitely be making again!

This is a delicious salad! I used chopped olives in place of sliced and mixed them in with the dressing just prior to tossing. Thanks for sharing this recipe!
