Leftover Pizza Breakfast Casserole

"I love breakfast casserole and was looking in the fridge for bread and breakfast meat to put in it. I pushed the pizza aside to realize I have no breakfast meats. Then it dawned on me... Can be assembled the night before and stored in the fridge until morning."

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x9-inch baking dish with cooking spray.
  2. Arrange pizza squares in the prepared baking dish. Mix eggs, milk, mozzarella cheese, onion, butter, garlic, oregano, and salt together in a large bowl; pour over pizza pieces. Top with Parmesan cheese and red pepper flakes. Cover dish with aluminum foil.
  3. Bake in the preheated oven for 45 minutes. Remove foil and continue baking until eggs are set and Parmesan cheese is melted, about 20 more minutes.

The novelty of this recipe caught my eye and when we found ourselves w/leftover pizza, I decided to give this a whirl and give it a "face". I must preface this review by stressing our pizza was supreme pizza from a local pizzeria and was very flavorful, so plain cheese pizza would not have the same outcome. I followed the recipe to a "T", with the exception of skipping the onion since it was already on the pizza and using an 8X11 pan, as I don't own a 9X9. It was good, VERY rich (cheesy/buttery/greasy), but good. While I can't see myself making this again for the two of us, I could see making it if we had a party w/overnight guests w/whom we'd enjoyed some late night pizza for breakfast the next morning. THANKS for the recipe, Prov31woman!

I'll admit, I was very skeptical... Eggs, Pizza??? But decided to give it a try anyway. This was surprisingly delicious! Thanks for the recipe!!!

So I used a chicken cordon blue pizza as the leftover pizza, it was amazing. Used cheddar cheese as that is what I had in the house. It was a bit greasy so I think the next time I will cut back on the butter. I normally don't eat leftovers but this might make me rethink recreating them.

All in all the quality of the outcome depends on the quality of the pizza but with that said, with a really good pizza from our local pizza parlor this was good. Adaptable too, we had a supreme pizza so it was pretty tasty as pizza, but we still followed the recipe and used the onion plus a clove or chopped garlic. Now as for Scp024, why don't you just keep your opinion to yourself and not rate a recipe that you didn't even try. Your are entitled to your opinion but not the rating since you didn't even make it.

So halve the cheese, skip the butter altogether, and use 'egg beaters' or 2 eggs, 2 egg whites if you're concerned about the fat and calories...still great taste and loads less fat! Great recipe, thanks.

I never thought of an idea like this before, but it's truly good, and kids enjoy it. A very creative way to re-purpose that leftover pizza. Thanks for sharing!
