This fresh-tasting salad combines bulgur with the bright flavors of lemon juice and zest, mint, and parsley. A large bag of lemons, and the mint right outside the kitchen door inspired me to create this dish.

Such a refreshing salad and it holds nicely in the refrigerator if you want to make it ahead. Light and nutty bulgur is soaked in water until it 's fluffy and ready to be combined with parsley, mint, tomatoes, and a bit of oil and freshly squeezed lemon juice. Serves four.

Chicken is simmered in an onion-tomato sauce in this really nice Indian recipe, taught to me by an elderly Indian lady, who used to cook for all her family. It is a simple recipe and tastes lovely served with rice. You can also use mutton instead of chicken.
