INGREDIENTS
1/4 cup butter or margarine, softened
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
TOPPING:
1 1/2 cups flaked coconut
1/2 cup packed brown sugar
5 tablespoons whipping cream
1 1/2 teaspoons vanilla extract

DIRECTIONS
In a mixing bowl, cream butter and sugar. Beat in egg and vanilla.
Combine the flour, baking powder and salt; add to creamed mixture alternately with milk.
Pour into a greased 8-in. square baking pan. Bake at 350 degrees for 30 minutes or until a toothpick inserted near the center comes out clean.
Meanwhile, combine topping ingredients. Spread over warm cake. Broil 3-5 in. from the heat for 3-5 minutes or until golden brown.

This was the quickest thing to whip up! I took it to work and people couldn't keep thier hands off it. If you just feel like baking up something sweet this is the way to do it.

The icing was good but the cake itself had a flour-like taste to it. Wasn't good at all.

My grandmother used to make this recipe. It is an oldie but goodie. The topping is incredible. Make sure you broil it long enough so it gets a little crisp on top.

DELICIOUS and oh so easy!!! I thought it would be too sweet but it was not. I would suggest being careful when you broil the topping. I almost burned mine after 3 min. and will check it earlier. Wouldn't change a thing otherwise.

Simple cake to make--just one problem...something is missing. The coconut topping is delightful, however I feel that this recipie needs a "kick" or a "boost" for the tastebud arousal. If this cake was chocolate instead of yellow, it would be exactly like a german chocolate cake. I will probably add some cocoa powedr next time to see what happens. Will I make this again? Maybe.

Maybe I did something wrong on this but this was the worst cake I have ever tasted/made. The cake was very bland tasting. One bite & it was in the trash. Will not make again.
