Family loved this. I used jalapeno flour tortillas and pinto beans otherwise followed the recipe. Very yummy and flavorful. Also doubled recipe and layered 3 times so increased bake time.

I've made this with flour and corn tortillas; sometimes both depending on how many I have on hand. Have never used corriander because I never have it. This is a family staple.

This was absolutely delicious! I omittied the cilantro (didn't have and my family doesn't care for it) but made no other changes. I've made it twice and both times it was gobbled up. My college son is learning to cook and definitely wants to learn to make this casserole. Definitely a keeper!

We loved this recipe. I will cook and the shred the chicken next time. I used chili powder instead of corriander. I also used flour tortillas instead of corn since I had them on hand.

This is the best enchilada recipe I have ever used. It was so yummy and pretty easy too. My family always goes crazy for it. I don't think I will ever go back to rolled enchiladas again!!!

This was ok, but a little bland for my taste. The tortillas should definitely be fried before layering them because they're just mushy otherwise. Could hardly tell they were in there. So I ended up heating more corn tortillas and spooning the casserole into them and topping with some hot sauce and eating like a taco. That made it better.

Very good. I served it with lettuce, green peppers, red onions, black olives and sour cream. I omitted the sour cream from the recipe so I could put it on top. I would have sprinkled more cilantro on top if I had any. I used flour tortillas rather than corn. I like the idea of topping it with avocado!! I will try that the next time I make it.

This was SO yummy! I followed previous reviews and added some corn. Also, I used a rotisserie turkey breast and shredded it. Topped with fresh avocado slices...MMmmmm Super easy and delicious.

This was a BIG hit.... We added corn with the black beans and did not use any hot peppers or spices. I also cooked the chicken with a bit of fajita seasoning. It turned out great!

We loved this recipe! Quick and easy to do! My adjustments: I used 2 packages of ready-cooked chicken (i.e. Tyson) instead of cooking the chicken myself. This simplified the recipe for me and made the preparation quicker. I also didn't use sour cream, as it was not on-hand. I followed the recipe ingredient amounts as listed and found that it made 4-5 hearty servings and not 8 (just to keep that in mind). I think I will try this next time with corn, as some other users have done and enjoyed. This recipe will stay in my recipe book!

Great recipe! I gave it 4 stars only because I added corn, jalepanos, onion and green peppers to the chicken/bean mix. With the things I added I'd give it a 5! I also used toasted yellow corn tortillas. Thanks

YUM! I left off the green chilis but used HOT enchilada sauce, added corn, and cut way down on the cheese and sour cream. I grilled the chicken with coriander and cumin and chili powder rubbed on. We loved it. I will definitely make this again and again. Thanks!!

The only change I made was adding some scallions. Also, I left out the cheese and sour cream because my hubby is allergic. I added it on my serving after and it was wonderful both ways!
