Enjoyed this. As others suggested, sauteed chicken with an onion, sliced fresh mushrooms and 4 garlic cloves in olive oil, added salt and pepper. Used cream cheese flavored with chives and onions, also added a few splashes of half and half at the end because I had it on hand. Smelled great cooking, had nice, even creamy and chickeny flavor. Thanks for the recipe!

Great base recipe, but like others I added some things to the original recipe...browned the chicken in olive oil, garlic & onion. Once the chicken was browned I sauteed it in a little white wine. I also used fat free cream cheese, 1/3 cup lowfat sour cream, 1/3 cup parm cheese, !/3 cup shredded mozarella. I also sprinkled some crushed red pepper on top before serving. Both my husband and 4yr loved it.

This was a good base recipe. I used vegetable broth and a package of tofu instead of chicken. I also added garlic, onion and yellow pepper in the broth mixture. I used fresh torn spinach instead of frozen and even though I let it simmer for at least 15 minutes, the sauce was still too thin for me, so I added a handful of shredded mozzarella cheese. I used two cloves of garlic this time, but next time I'll double that. I might add walnuts at the end also for that added crunch and the health benefits. As other reviewers stated, this was great cold the next day. I might even try serving this as a cold pasta salad! I served over fresh fettuccine this time...delish!

I didn't follow this recipe exactly so I'm not sure how fair it is to review. I'm going to do it anyway. I modified things quite a bit but the bones of the recipe are good. Instead of using cream cheese, I used whipping cream, milk and fresh parmesan cheese to make a sauce. I browned chicken pieces in a skillet with olive oil, onion and garlic until the onions were a little carmelized. I also added sauteed mushrooms, a handful of capers, about 6 sun-dried tomatoes (chopped into small pieces) and red pepper flakes for spice. I drained the spinach well and chopped it very fine. We topped it with more parmesan. This was quite tasty.

I loved this recipe with a few minor changes: sauted chicken cubes with a finely chopped onion, a cup of chopped mushrooms and a tbsp. of minced garlic. I did not add the broth, but after cream cheese was melted, added a 28 oz. can of crushed tomatoes and fresh basil which made an amazing rose sauce. Even though my kid have to have theirs without spinach, it's still a winner.

This looked sort of strange but tasted really good. :) I used two huge chicken breasts (weighing maybe 1 1/4 pounds total), a can of vegetable broth, no tomatoes, and I used macaroni instead of penne. I seasoned the chicken with garlic powder and seasoning salt and then I sauteed it in a little oil. Oh, and I added some chopped onion and a drained can of mushrooms to the chicken while it was sauteeing. Really good! I would advise that you really drain your spinach (I wrap thawed spinach in a towel and twist the towel on either side of the spinach to drain as much water out as possible) if you like a thicker dish with bigger chunks of spinach throughout. I added a little sour cream (maybe half a cup) when I mixed in the pasta because it wasn't quite creamy enough for me. Thanks for sharing, Laura!

I liked the idea of cooking the chicken in broth instead of oil. However, I found this a bit bland and not very creamy. My husband and I thought it was ok, but I don't think I'll make it again.

This is SO extremely good and easy. My family loves it and its great still warm or as a cold pasta salad the next day. I added a pack of Italian mix too, and highly recommend doing so. Fast, easy and awesome, thanks for our latest family favorite!!!! If you want it more creamy add a pack of buttermilk ranch dressing mix instead of Italian. SO GOOD!

I gave this 4 stars because I agree with other reviewers, it is a great starting point. Here is what I did- sauteed the cut up chicken in a little olive oil and chopped fresh garlic with salt and pepper. Then simmered in the chicken broth, added the cream cheese, added a box of creamed spinach instead of plain, and followed it up with a can of diced tomatoes. It made ALOT! But my kids enjoyed it, top with a little parmesean and it is a good weeknight meal. Good luck!

i didn't have tomatos, so i used a can of tomato puree instead making it a cream/tomato sauce. i also stirred in some shredded cheddar. i love it! like what others said, this is a great base recipe, just play around with it adding whatever you fancy. makes a great healthy meal served over wholemeal pasta. thank you for this!! =)

If you change the sause a bit and omit the tomatoes and it is simply awesome! I added 1/4 cup flour, 1 cup cream, and two garlic cloves and it was fantastic!

I was pretty pleased with this. I cooked the chicken in water and bouillon granules, along with some white wine vinegar and fat free dry italian dressing, AND fresh minced garlic. The vinegar added quite a bit of tang, but I liked it. Next time I will try plain white wine and some sweet basil. I also used fresh torn spinach instead of frozen, and grape sized tomatoes instead of cherry tomatoes. Non-fat cream cheese as well...it melted great.

This was really good. I did make some changes though. I used canned Italian style diced tomatoes since I didn't have any fresh. I also used reduced fat herb cream cheese. This made a lot of sauce which I then had to reduce, but it was still excellent. Even my veggie hating husband said it was great!
