I was amazed at how delicious this recipe was, especially after I made it even healthier. It was fast, easy, nutritious, and super delicious! I used low-sodium kidney beans and low sodium black beans. I added 1/4 cup water, and one can of diced tomatoes with green chiles. I also added 1.5 cups of frozen corn the last hour of cooking.
