This is a recipe I made up because I really wanted some salsa and tortillas; however, I was out of salsa. Tomato and celery along with some other ingredients are sauteed in oil and then simmered in tomato juice. It's a quick fix when you have no salsa. 

Tomato Salsa without Onions

My mother-in-law loves Tex-Mex but has an onion allergy. After several attempts, I invented an authentic tasting salsa that derives some of it's smokey flavor from the roasted pepper. I've taken to roasting the peppers in bulk so I can always have some on hand.

Chilean Fruit Salsa

Take advantage of the winter bounty of fruits from Chile (it's summer down there) and combine Chilean Hass Avocados with peaches and grapes. Use firm-ripe avocados so you'll have individual avocado chunks for salsa, or select soft-ripe avocados and mash them a bit to create a fruited guacamole. Serve either version with fresh vegetable dippers, toasted pita chips, vegetable chips or over grilled fish, chicken or burgers. The salsa/guacamole also makes a nice centerpiece for a fruit plate.
