INGREDIENTS
1 1/2 pounds ground beef
1/4 cup chopped onion
1 (16 ounce) can kidney beans, rinsed and drained
1 (14.5 ounce) can stewed tomatoes
1 teaspoon salt
1 teaspoon chili powder
1 bay leaf
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
2 cups cooked long-grain rice

DIRECTIONS
In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes and seasonings. Cover and simmer for 5 minutes. Add rice; cover and simmer for 30 minutes or until heated through. Discard bay leaf before serving.
FOOTNOTE
Cajun-style diced tomatoes can be used in place of the regular stewed tomatoes in Kidney Beans and Rice.

This was easy and quick to make. It did not have a lot of flavor, but tasted good. I did forget the onion, so might be the reason it was bland. My husband also approved, so I will be making this again. I used Italian stewed tomatoes because they were on hand and added the rice immediately after stiring in the spices instead of waiting 5 min.

So good!! I made a few changes, though. I cooked it in a crock pot rather than over the stove - about 5 hours. I used Italian stewed tomatoes and pretty much just improvised with the seasonings. Tasty AND easy!

Definitely easy and tasty. I had a few changes, since I'm vegetarian. Instead of beef, I used TVP and I used a wild rice/lentil mixture instead of plain rice. I also topped it with some lemon pepper, although I think some sort of caso fresco and cilantro would be really tasty.

good recipe, with a few minor tweaks: i added a chopped green bell pepper and half a can of enchilada sauce. my boyfriend ate it two days in a row. will definitely make again.

I followed the recipe exactly but it seems to be missing something! Would make a great stuffing for peppers or cabbage but doesn't fit for a main dish.

I made this tonight and it was quite tasty. I only used 1 lbs of ground beef and added more of the listed seasonings. I added a side of green beans and garlic bread to round this meal out. I'll also be adding this to my recipe box for a quick easy meal! Thanks!
