Original Recipe Yield 1 - 9-inch pie
 

Ingredients

  • 2 cups vanilla wafers
  • 1 cup slivered almonds
  • 1/3 cup real butter, melted
  • 2 (3 ounce) packages cream cheese, softened
  • 1/4 cup real butter, softened
  • 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
  • 1/3 cup lime juice
  • clear plastic wrap
  • Garnishes:
  • lime wedges
  • lime curls
  • thawed whipped topping

Directions

  1. In food processor bowl, add vanilla wafers and process until ground. Add almonds; process coarsely ground. Transfer to a large bowl; add 1/3 cup melted butter and stir well. Press crumb mixture on bottom and up sides of a 9-inch pie plate. Bake at 350 degrees for 10 minutes or until lightly browned; cool.
  2. In clean food processor bowl, add cream cheese and remaining 1/4 cup butter. Cover and process until fluffy, scraping sides of bowl as necessary. Add sweetened condensed milk and lime juice; cover and process until blended, scraping bowl as necessary.
  3. Pour mixture into pie plate; cover with plastic wrap and refrigerate at least 4 hours. Garnish if desired.

  • If you do not own a food processor, use a blender to prepare the crust, and an electric mixer to prepare the filling.
