This Greek/Lebanese style meat loaf is sliced and served with pita bread, tzatziki, and tomatoes for a delicious gyro that is the closest I've come to emulating my favorite Mediterranean restaurant. The preparation time seems long, but most of it is resting time, so you can be doing other stuff!

Made from a blend of cooked bulgur wheat, chopped mint, and onions stirred into ground lamb, then cooked as small patties, kibbeh is a favorite traditional dish in Lebanon, Syria, Palestine, and Iraq. Serve kibbeh with tahini, a sesame seed paste. 

Mediterranean Made Rights (Loose Meat Sandwiches)

Where I live loose meat sandwiches are know as made rights, this is a Mediterranean take on this favorite. You can use tzatziki sauce (cucumber/yogurt sauce used on Gyros) in place of the feta sauce to give it a more gyro kind of touch.

Before my husband and I got married, he found this recipe on the Patak's Indian food website. We made it and loved it. But when I went to find it later, I couldn't! So this is a combination of what I remember from the recipe and other Keema Matar recipes that I found on-line.

Ground lamb is seasoned with fresh mint and cilantro, and ginger and green chili paste, and made into delicious shish kabobs. Serve with lime wedges, mint chutney, and sliced, sweet Vidalia onions. 

Leek and Meat Fritters

Fragrant and oniony, cooked leeks coalesce with ground lamb or beef, eggs, matzo meal and spices to make delicious fried fritters. Be sure to wash the leeks thoroughly before cooking to remove any garden grit.

Peas, carrots, and tofu are simmered together in coconut milk with spices, creating a warm, savory Indian favorite, easy to make and exciting to eat. Serve over hot rice, with yogurt on the side, which may be added to taste to cut the heat and add sweetness.

This is an authentic familiar traditional Cantonese home-style dish. It's a recipe mostly passed on within families, and it is rare to find this dish in any Asian restaurant. Trust me though, it is VERY good. It's actually intentionally salty tasting, so it goes very well with white rice.
