Make it a 5-star with the following alterations:
Add marinated artichoke hearts, reserving 1/2 c. marinade for dressing. Dressing: add 1/2 c. reserved artichoke marinade, 1/4 c. vinegar, 1/4 cup balsamic vinegar, juice from 1/2 a lemon, fresh herbs (mint, basil, parsley - whatever you have on hand), some red chili sauce, salt and pepper to taste.
I used a smoked swiss/mozz mix for the cheese, added tomatoes, banana peppers and green pepper. Very pretty salad and a definite crowd-pleaser.
WARNING: this makes WAY more than 6 servings. We had a party of 15-20 and had plenty!
