I was looking for a recipe to use up some bran flakes and tried this because I didn't want muffins. I thought the temp. was a little high and reduced it to 350 and this cake baked up in 17 minutes. It is on the dry side, a little tough and lacks flavor other than the flavor that comes from the bran cereal. I even added a tsp. of vanilla to the batter and cinnamon in the topping. This recipe is what it is and that is to incorporate bran cereal into your diet through inventiveness.

This cake is lacking in flavor, and dry as sawdust. I tried this as an alternative to bran muffins, but I wish I hadn't. Yikes!
