I'm from MD, I'm picky about cream of crab and have been making it as long as I can remember. I don't follow this recipe hardly at all--not bc it's bad but bc I have some of my own ways I'm used to but I'm reviewing this just to say that I never used the hollandaise packet before and saw this recipe, tried it, and it changed EVERYTHING! It completely took my old cream of crab recipe that I thought I had perfected to a new level. If you're skeptical at first, don't be stubborn about what you know has worked before, bc it's worth it!
