Pappardelle Puttanesca

Submitted by: SINISTRELLA
A fantastic variation of a simple but delicious Italian dish, my Puttanesca is a mildly spicy white wine tomato sauce with fresh garlic, mushrooms, capers, and anchovy-stuffed green olives. The anchovy-stuffed green olives are easy to find next to the rest of the canned olives at any major grocery store.

A simple, delicious, and versatile dish that is naturally vegan, but can be easily altered to accommodate both vegan and omnivorous eaters--excellent for family dinners and gathering where there will be people with a variety of food preferences. For meat-eaters, use grated Parmesan cheese instead of the nutritional yeast, and andouille sausage instead of the vegan sausage.

A good friend gave me this recipe and I've since found it to be so tasty and best of all, easy! My family loves it and it doesn't take long to make at all! Its perfect over angel hair pasta with garlic bread on the side! Double the recipe for larger parties or just for leftovers!

Inspired by two classic Italian sauces, spicy tomato-olive-y putanesca and arrabbiata with red pepper flakes and bacon, this dish blends both and serves them with rigatoni pasta topped with feta cheese and fresh parsley.

Sauteed sweet peppers and kale are tossed with farfalle pasta and sprinkled with a generous amount of crumbled feta cheese. This recipe was inspired by a similar recipe I received in my produce box from Full Circle Farm in Carnation, WA.

This is a great dish with wonderful Mediterranean flavors and it can be scaled up to serve more people. Add ingredient amounts to your liking.

Pan-fried Polenta with Corn, Kale and Goat Cheese

Fancy, fancy polenta. First the corn and parmesan polenta is whipped up. Then the polenta is cut into triangles, fried, topped with thick slices of tomato and a sprinkling of chevre and broiled. This glorious triangle is served on a bed of kale.

I merged the best of two family recipes, then fiddled a bit. Pretty easy. Very spicy if you use hot Portuguese sausage. Both the sausage(chourico or linguica) and jarred peppers (Pimenta Moida) are available online if you don't have a Portuguese market in your town.
