Vegan Lentil, Kale, and Red Onion Pasta

A simple, delicious, and versatile dish that is naturally vegan, but can be easily altered to accommodate both vegan and omnivorous eaters--excellent for family dinners and gathering where there will be people with a variety of food preferences. For meat-eaters, use grated Parmesan cheese instead of the nutritional yeast, and andouille sausage instead of the vegan sausage.

Fresh spinach and kale are cooked with ginger, garlic, and spices, then simmered with milk and cottage cheese to make a creamy dish to serve with hot cooked rice or naan.

Pappardelle Puttanesca

A fantastic variation of a simple but delicious Italian dish, my Puttanesca is a mildly spicy white wine tomato sauce with fresh garlic, mushrooms, capers, and anchovy-stuffed green olives. The anchovy-stuffed green olives are easy to find next to the rest of the canned olives at any major grocery store.

Sauteed sweet peppers and kale are tossed with farfalle pasta and sprinkled with a generous amount of crumbled feta cheese. This recipe was inspired by a similar recipe I received in my produce box from Full Circle Farm in Carnation, WA.

Inspired by two classic Italian sauces, spicy tomato-olive-y putanesca and arrabbiata with red pepper flakes and bacon, this dish blends both and serves them with rigatoni pasta topped with feta cheese and fresh parsley.

All ingredients come from the freezer or the refrigerator and are assembled at time of use. Freshly cooked beans are better than the canned variety so have some on hand always, all beans work well for this wonderful soup! Ladle into your nicest soup plate, find a warm cozy place to sit and sip your soup.
