Oh. My. God! This is beyond amazing!! It was by far the best roasted chicken I have ever eaten, and I can't believe I made it!! I didn't have celery on me, so I quartered an onion, and stuffed it inside. I used olive oil instead of margarine/butter as a more healthy choice, and it was superb. DEFINITELY making this again. I still can't believe how juicy this chicken was. And the best thing of all, it was SO easy to make. Believe me, if you haven't made this chicken yet, PLEASE DO!! :) Thanks for this great recipe.

This recipe is soooooo yummy!!! I just added some minced garlic and rosemary...it would have been still super yummy without what I added but I love garlic and rosemary. I can't say enough about this recipe.....I could have ate the whole chicken myself. Thanks for this great recipe!!!!

This chicken was fabulous...does take longer to cook so you must have patience and time but boy is it worth it! My 9 year old stepdaughter loved it so much she ate 3 drumsticks and she's usually a light eater! Yum, yum, yum!

Excellent! I added lemon pepper & Lawry's Seasoning salt to the skin; only used butter inside (not around in roasting pan); and basted it with dripping occasionally last 15 minutes. It did require longer to cook in my oven though - about 1 hr 45 minutes, but could tell it was done when the juices ran clear. Easy and very moist!! A keeper!

My first time making this I was skeptical. With so few ingredients, how could it be so good? It was DELICIOUS! I add a few cloves of garlic, some pieces of onion inside the chicken and it turned out great! I also threw some carrots, onions and potatoes in the bottom of the roasting pan hoping for some great roasted veggies, and they turned out great! I paired this with some garlic lemon butter I found on this site, few pieces of corn on the cob and it was all delish. Best recipe I've ever made from this site. It was wonderful. Will make again for sure!

Best chicken recipe....ever. I can't even tell you how much I love this chicken. It is so juicy and so delicious. Follow the recipe exactly (at least the first time you make it) and do not add any additional seasonings. I do recommend cutting the butter by 1/3 or so because you really do not need that much for it to turn out as juicy as ever. Season it liberally, baste every 20 minutes or so, and reap the rewards of your minimal labor later. This recipe is soooo good. 10 stars!

I have to admit, I was skeptical about this recipe thinking "how could the simple ingredients for a chicken produce such a succulent dish".....so I decided to see what everyone was "raving" about. I following ingredients & directions exactly. UNBELIEVEABLE. This chicken was the BEST roasted chicken I EVER had. I am simply amazed at how wonderful and delicious this turned out. This was really good, I had a whole chicken and needed to make room i my freezer. I seasoned with salt pepper and added a little onion and garlic powder. When i did the butter inside I added lemon slices instead of celery because i didnt have any and also placed a few on the outside. Chopped up some red potatoes and seasoned them well. Placed them around the chicken as it baked. Turned out great!

"Awesome" to quote my 12 yr old Daughter. I had to cook a little longer because I used a a 5 lb chick. I didn't measure anything either and put some margarine under the skin as well. This is now my roast chicken recipe.

SIMPLY delicious! Like many other reviewers, I was a little wary of the recipe at first--it sounded too easy, but I couldn't ignore the high ranking so I gave it a try. I used butter, not margarine and added a little garlic powder. IT WAS GREAT! I may try to cut the butter back a little, but other than that I wouldn't change a thing.
