PERFECT!!!! Don't change a thing!! It does take about 2 hrs to bake so make this ahead of time but so worth it!

This came out wonderfully~ I used onion instead of celery, since I didn't have any celery on hand. And we love onion. It did take a little longer to cook~maybe 20 minutes. For about 45 minutes I cooked it breast side down, then turned it over for the rest of the cooking time. I also put some of the butter between the meat and skin. My family devoured it....I will definitely be making this again.

This chicken was delicious. In addition to the salt & pepper, I used a blend of spices that includes onion powder, minced garlic and oregano. The chicken was browned to perfection, juicy and delicious. This will definitely be one of my go to recipes!

This was my first attempt at a roast chicken and it was so simple and it's AMAZING. I basted every 20 minutes and put a couple cloves of garlic in the cavity along with a small sliced onion in the bottom of the pan. It definitely takes longer than an hour and 15 minutes though, in total it was a little shy of 2 hours. I will definitely be making this again and again. My entire family loved it.

I made this Chicken for dinner this evening, and I have to say it's the best Roast Chicken I've ever made! Thank you ROBINROCKINGBIRD for sharing this with us, it's rare that my wife helps herself to seconds. The only thing I did different from the recipe is to substitute salt for Garlic salt.

OMG! This is better then MY MOM'S! (Hope she doesn't see this!) Wow-I took one bite and had to give this 5 stars. Very Juicy. I used butter plus the suggested spices and added thyme...Delicious. I cooked 2 chickens for my men to pick at this weekend while I will be away...I am sure this won't last a day! Thanks for sharing this recipe! I am glad I found it!
