I actually had my husband dig through the garage for our bread maker so I could try this, and we both agreed that it was well-worth the effort! I wasn't able to use bread flour due to food allergies, but it worked very well with spelt flour (though it didn't rise as high as it would have with bread flour). I added 1/2 a tsp. of garlic powder, increased the Italian seasoning to 1/2 tsp. and used fresh rosemary instead of dried, but those were the only other changes. We each had a piece cut fresh from the loaf and slathered with butter spread, and it was fantastic. And oh, WOW, yes it does smell amazing while baking! Later that day, I used the bread for chicken sandwiches with melted mozzarella, basil, tomato, roasted peppers and sun-dried tomato pesto, and I have not been so happy eating a meal in a looooong time. The bread totally made the meal, and I know I will be making it over and over again. I may even have to cede some permanent counter-space to the bread maker again . . . : ) AWESOME recipe for something so simple!
