3 medium russet potatoes, washed and cubed
2 medium sweet potatoes, peeled and cubed
1 medium onion, chopped
1 medium green or red bell pepper, chopped
1/4 cup olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1 (12 ounce) package Johnsonville® Chipotle Monterey Jack Cheese Chicken Sausage, cut into 2-inch pieces
This was very good! I had to use all russet potatoes as I did not have sweet potatoes on hand. Yummy! Will make again. Probably will add more seasoning to the potatoe mixture next time, red pepper, garlic etc.
Modified using all russets and used roasted red pepper chicken sausage. The whole family loved it.

This is one of those great cold night, easy to fix dinners. The sausage is nice and spicy and the roasted veggies is a great contrast. So easy to make and would be a great meal to delegate to those who don't have a lot of kitchen skills or do not like to cook.
OMG it was delicious and i was a bit skeptical. But this was a fun and easy spin on chicken sausage.
