Sometimes less means more, as with these muffins made with egg whites, a little oil and a scattering of chopped walnuts. The lemon zest makes for a delicate contrast to the sweet banana batter.

These tasty muffins are low in fat, but downright yummy. As banana compensates for the texture of fat, no butter, oil or egg yolks are used in this recipe. Chocolate chips make these muffins extra special.

This is so good and reminds me of a real moist kind of a sweet quick bread. Everybody asks for the recipe: this bread is moist, and easy to make too. Note: If you are using frozen blueberries, you can thaw them in the microwave for about 3 minutes. However, you need to increase the amount of blueberries to 3/4 cup.

There is no oil or butter in these muffins, but they are still rich and moist -with eggs and all that banana, how could they not be? So gobble them up with a clear conscience!
