  1. Mix cornmeal, paprika, onion powder, garlic powder, and cayenne pepper on a plate.
  2. Beat milk and eggs together in a bowl. Dip catfish fillets in milk mixture, then gently press fillets into cornmeal mixture, coating both sides. Shake off excess breading.
  3. Heat vegetable oil in a large skillet; pan-fry catfish in hot oil until the fish is golden brown and flakes easily with a fork, about 4 minutes per side.

its been raining all weekend and I pulled some catfish out of the freezer.I love everything Spicy but my children dont. This recipe is a Happy compromise. I love it my wife and kids agree too.

My family is catfish K RAZY!! THIS just adds to their love for this muddy buddy! The only thing this dish needs is salt n pepper. Perfect otherwise.
