Directions

  1. Toss jicama, red pepper, mango, and red onion together in a large bowl. Set aside.
  2. Stir cilantro, lime juice, honey, salt, and cayenne pepper together in a bowl.
  3. Pour the cilantro mixture over the jicama mixture and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes.

Made this last night for dinner and my Husband and I loved it. Great crunch and very fresh and tangy. Served it with cold colossal shrimp and it was the perfect light dinner for a hot summer evening. Will be making this all summer!

Actually, no, it doesn't take that long, and I do it by hand... I guess it just depends on how efficient you are in the kitchen :) They don't have to be perfect matchsticks! I think the general concensus around here is not to rate things you haven't actually made, but thanks for the feedback.
