Wow, was this good! And so easy and forgiving. I picked up two pounds of pork sirloin chops for cheap at the store, and was looking for something to do with them. I remembered this recipe, and it worked great. I did change things based on what I had on hand- used 1 can of black beans, 1/2 jar of salsa, and a dark beer in place of the chicken broth. To make up for not having quite enough salsa, I doubled the spices. Awesome! The meat just fell apart at the end. I served it in bowls over the "Lime Cilantro Rice" from this site, and it was perfect. I plan to freeze about half of it as well. Thanks for sharing, ValleyGirl!
