This is the best banana bread i ever made.. and I've made many from this website. What makes me love this recipe is the little amount of butter it uses, yet manages to make a moist loaf that is light and fluffy, not dense. Most imporantly, it does not come out greasy.
I reduced the sugar to 3/4 cup (1/2 brown, 1/4 white) to reduce the sweetness and added 1 tsp of vanilla. I also baked them in muffin tins to reduce the cooking time. My muffins turned out pale though.. I was hoping for a crunchy top so I turned on the broiler.
