Awesome soup! Made this for Mother's Day brunch and it was a huge hit!! Tons of vegetables, healthy, and makes the house smell wonderful. I took tips from some other reviewers and did the following: Substituted half the tomato paste for diced tomatoes. Added corn. Bought mozarella for people to put on top. I can't wait for another occassion to make this again. It rocked!

I've made this about 3 times so far, each with a bit of tweaking. I find that I get the best flavor if I omit 2 cups of the tomato sauce and use 2 cups of V-8 juice instead. I also added a can of drain portabello mushrooms to the soup while it was simmering. I only had white wine on hand, so that's what i used. I also used 1lb of browned ground beef instead of pasta. My husband loved it. Anything that sticks to your ribs is a winner with him. Plus, most of these veggies I got out of my veggie garden! Perfect! I served this in bread bowls and got rave reviews. There was not one drop of soup left. 5 Stars!!

This was my first attempt at making a soup/stew. This is such an easy, great, and healthy recipe! I replaced half of the tomato sauce with a can of italian diced tomatoes, and I used dried oregano and basil, and I didn't add the red wine. It tasted wonderful! Thanks for the great recipe!

This was truly delicious. Hubby doesn't like soup for dinner but went back for seconds so he could dip more bread in it! Had it with fresh Sourdough round and roasted garlic cloves to spread on it. Yumm! Best minestrone I've made!

FABULOUS! I've made this soup 3 times now doing variations each time. I like to add frexh mozzarella on top. I also add corn and skip the pasta to forego the extra calories. I love the spinach!! Thanks for sharing this!!

This is a delicious, hearty soup. I will definitely make this recipe again. I did find the red wine changes the flavor slightly. With or without the wine, a 5 star hit.

This Minestrone was really good. I used a whole can of chicken broth and left out the water. Also, used fresh green beans instead of canned. It makes a lot of soup!

This soup made SO much! I only made enough for "4" servings and it made so much that I was able to freeze half of the soup for another night. My family loved it and compared it to Olive Garden! My 16 month old daughter loved it!

Mmm, good soup! I used dried Great Northern beans instead of canned kidney beans--1/2 cup, soaked for about six hours. After I sauteed the veggies, I added the soaked beans and four cups of water, and let it bubble away until the beans softened--a little over an hour. I did end up having to add about three more cups of water to keep it from getting too thick. Once the beans were soft, I added one can diced tomatoes, one chopped fresh tomato, one 8oz. can of tomato sauce, the zucchini and spinach (left out the green beans), two chicken bouillon cubes, white wine, and dried herbs, and simmered for another 45 minutes. Final result is wonderful. I will come back to this recipe often.

My husband loves minestrone soup so I thought I'd make this one. Having never made any homemade soup, I was a little nervous. He said it was as good as any he'd ever eaten. He loved all the vegetables.

that was good! I replaced the chicken broth with vegetable broth. I also didn't want a stew so I used drained diced tomatoes as well. I added cabbage, hominy, garbanzo beans and left out the pasta. Zero animal fat to speak of in my version.

I am not really a tomato based soup eater, but I LOVE this recipe! The only addition I make is adding 1 lb. of browned and seasoned ground beef. I make 3 or 4 batches at a time, cool and freeze them in gallon sized zip loc bags. When I need a quick meal I thaw it out and heat it up. So yummy! My whole family likes it too. Which is a hard one to find with 3 kids 7 and younger.

This soup is absolutely the best. Thanks for a great recipe. I did use frozen green beans like one reviewer suggested. Also my husband grew some regular spinach, so I used that as well. I just cut it up into smaller pieces. I see now that I forgot the wine, but the recipe was still great. I have enough leftover for the my college kids when they raid my freezer looking for foods to take back with them.
