THIS WAS GOOD. DONT KNOW IF I WILL EVER MAKE AGAIN JUST BECAUSE OF ALL OF THE INGREDIENTS AND TIME IT TAKES TO CHOP EVERYTHING UP BUT IT WAS GOOD FOR A CHANGE! I WOULD SUGGEST NOT AS MUCH SPINACH BECAUSE OURS HAD WAY TO MUCH AND MAYBE MORE NOODLES? THANK YOU =]

This is a GREAT recipe. I have made this more times than I can count and just realized that I have never reviewed it. I follow it to the letter, why mess with perfection? The tip for the pasta is a bonus. Thank you so much Jamie for sharing your creativity with us!

This was good because of all the vegetables. I felt that it had too much of a tomato sauce flavor, next time I will use crushed tomato. I could not finish a small bowl, it felt like I was eating spoonfuls of tomato sauce. I just added more chicken broth to thin the soup out hopefully that will help. I used fresh steamed green beans, orzo intead of shells, and dried herbs. Everything else to a "T."

This was great, we all loved it. We even ate the leftovers which is saying a lot because we are not the leftover types. I added some ground beef and served french bread. Great dinner. Next time I'll maybe add tiny meatballs. This was great thanks!!!

Very nice! It makes heaps and keeps really well and gets better in the day or two after making. I used half a large tin of tomato juice in it so it was a beautiful rich tomato flavour. I also added chopped bacon which I browned quickly first then kept on with the recipe. I am lazy when it comes to measuring out individual italian spices and I substituted bottled italian herbs and a couple of bay leaves.

I made this soup for the first time durring the summer, and even in the hot hot heat, this soup was so amazing and refreshing. I am making again now that its spring. And will be sharing with all my neighbors because they all love it too! I usually use navy or white beans in addition to kidny beans. And the red wine is MUST!

Amazing soup! I made very few adjustments in ingredients to match my personal taste. This one's definitely a make again - Bravo Jamie! I just want to point out that because so many canned ingredients are being used here, a serving of this soup and a can (which is regarded as approximately 2 servings) of Progresso Minestrone soup are not too far off. True, making it at home allows us to include a lot more vegetables than the canned soup, but let's not fall under the illusion that this version of Minestrone is so much healthier than we can find in a can. Calories: Serving of Jamie's soup - 232 Can of Progresso - 220 Total Fat: Serving of Jamie's soup - 8.3g Can of Progresso - 4g Saturated Fat: Serving of Jamie's soup - 1.4g Can of Progresso - 1g Sodium: Serving of Jamie's soup - 1267mg Can of Progresso - 1920mg Carbs: Serving of Jamie's soup - 32.1g Can of Progresso - 38g Sugars: Serving of Jamie's soup - 12.1g Can of Progresso - 4g I'm still a fan of this recipe, and I think that the benefits of having the chunky fresh vegetables in the soup outweigh the higher sugar and fat content by a longshot, but some people on restrictive diets may not agree.

This is very good soup and is even better the next day. I used crushed tomatoes instead of tomato sauce because that's what I had on hand and cooked the pasta in the soup.

This was a great soup full of flavor and vegetables. I didn't have spinach, so I used cabbage instead. It still tasted like a great minestrone.

Good! I really enjoyed this and so did my company. I didn't change much, except for, I only added 2 zucchini's, used fresh green beans, dried oregano and added an extra 1/2 cup of the pasta. I liked how healthy and fresh tasting it was.

Very very good! I made this during lent to serve as an entree and it worked well. It is not only filling but great tasting. I was so disappointed when all my left overs ran out. I agree with other reviewers that it makes much more than eight portions. Will be making again soon.
