Made this for the first time tonight and it turned out pretty good. When I was buying the ingredients, the grocer who is experienced with Cajun cuisine showed me where to find the file powder, but it intended to be use with dishes like gumbo, so he recommended I skip it. He also recommended that I use plain crushed tomato and build up the flavor with the seasonings. I did as requested and am happy with the end result. I chose this dish to make as my final project for cooking class. I didn't have to time to make it class, but that is okay because I made it for my hubby. YUM!!
