These were fantastic! Not a fast recipe, but definitely worth the effort. My one suggestion would be to double the amount of dough, because I halved the meat recipe and still had to use the full 2 cups of flour, etc. This made about 8 patties.
Also, I substituted ground turkey, added a bit more curry powder and some paprika. And if you want traditionally spicey patties, I'd suggest a dash of cayenne. I also added a some raisins to the filling (mix 'n' match with empanadas), which added a nice sweet contrast to the spices.
All in all, the filling is very savory, and the pastry shell is flakey and crunchy. I will definitely be making this again!
