Cube steaks are battered and breaded, then fried and served with a squeeze of lemon juice. This is a family favorite of ours, my mom got the recipe from a German lady when we lived in Germany.

Translation of the name: 'Wiener' this word comes from the word 'Wien', which is the Austrian city called Vienna. 'Schnitzel' means basically meat in a crust. I'm German and hope you can understand my English description.

I don't have a clue where my Dad got this particular recipe, but he used to build it during hunting season when we had fresh venison (elk, antelope, mule or whitetail deer), 'hanging and aging'. I still make it when the opportunity presents itself.

Both my mother and father were Viennese and grew up there. This was my mother's recipe. Veal can also be used in place of pork.
