INGREDIENTS
1 small onion, finely chopped
2 garlic cloves, minced
5 teaspoons olive or canola oil, divided
1 (14.5 ounce) can Italian stewed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried rosemary, crushed
1 1/4 pounds turkey breast cutlets
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons shredded Parmesan cheese

DIRECTIONS
In a saucepan, saute onion and garlic in 2 teaspoons oil until tender. Stir in the tomatoes, basil, oregano and rosemary. Bring to a boil. Reduce heat; cook, uncovered, over medium heat for 15-20 minutes or until sauce thickens.
Meanwhile, sprinkle both sides of turkey cutlets with salt and pepper. In a large nonstick over medium heat, cook turkey in batches in remaining oil until juices run clear. Serve with tomato sauce. Sprinkle with Parmesan cheese.

Nutritional Analysis: One serving equals 263 calories, 7 g fat (2 g saturated fat), 90 mg cholesterol, 750 mg sodium, 11 g carbohydrate, 3 g fiber, 37 g protein. Diabetic Exchanges: 5 very lean meat, 2 vegetable, 1/2 fat.

I am sorry, I really did not like the dish. I may try it again with some modifications. The called for amounts of the garlic, oregano and basil were too overpowering along with the italian style stewed tomatoes, which already has garlic, basil and oregano in it. If I try it next time, I will probably omit the added basil and oregano. Also I served with pasta noodles on the side to soak up some of the sauce.

Very good. Added mushrooms to the sauce and used diced tomatoes. Also added a fresh vine ripe tomatoe. My husband said we could have this one again. Quick and easy.

This recipe was OK. It gets points for being a quick dinner with stuff I already had in the pantry. But it needed some additions to give it the depth of flavor it lacked (although I used regular chopped tomatoes since I didn't have any with the herbs added, so that might explain it). I added 1/2 tsp of thyme, 1/2 tsp of garlic salt, and about 3/4 cup of boiling vegetable stock (which is what added the depth), then cooked it a bit longer to let it thicken.
